The Shiitake Way: Vegetarian Cooking With Shiitake Mushrooms (Paperback)

The Shiitake Way by Jennifer Snyder is a fabulous vegetarian mushroom cookbook. The recipes are easy to follow, and great care is taken that they are all low fat and healthful. I especially love the mushroom loaf. It reminds me of my mom's meatloaf, from my childhood, but without the heavy meat. If you are interested in ways to cook these delightful mushrooms, but thought it might be difficult, try this book. It is inexpensive and well thought out. Andy Weil covers information regarding the health benefits as an added plus.

Mushroom Cookbook:
Recipes for White & Exotic Varieties

by Mimi Brodeur

Most mushroom cookbooks on the market focus on only a few common varieties found in your everyday market, especially button mushrooms: not so Mimi Brodeur's Mushroom Cookbook: Recipes For White & Exotic Varieties. From appetizers to soups and main dishes, recipes blend in all kinds of mushrooms - and an index makes it easy to locate dishes for specific kinds of mushrooms. Herbed Veal Roast with Exotic Mushrooms and Cheesy Portabella Mushroom Sandwich are only a few of the dishes which are unusual and appealing. Color photos might have added even more attention to finished dishes, but the instructions are very clear and easy to follow.  By Midwest Book Review
